A very rare tea due to it's elaborate processing techniques. Uncommon in the US. Green tea techniques are used, but with one extra step prior to firing. This step follows steaming when the leaves are covered and lightly heated to cause a “yellowing” or sealing of the tea before being rolled and dried. Some tea drinkers prefer yellow tea as it has less of a tendency toward astringency and “grassiness”. Once again, this often depends on how one brews their tea.
