White tea, famous for being higher in antioxidants than other tea, is picked early in the spring after the frosts are gone and before all or most of the leaves have opened. Once picked, the leaves are wilted before being lightly baked and sometimes rolled for shape before final drying. Flavors range from subtle and fruity to nutty, sweet, and dark.
