Raw Pu'er
Pu’er tea is famous for its ability to deepen in flavor as the years go by. While other teas need to be in airtight containers, pu’er tea requires air in order for the tea to continue evolving and changing due to the microbial action within the tea. Raw (a.k.a. uncooked, green, sheng) style pu’er is made by steaming the sun-dried leaf and pressing it into cakes or bricks for transport and aging. Some connoisseurs of raw pu’er tea consider anything under twenty years old as “young”. It is great fun to experience the changes in both flavor and aroma over the months and years.
