Oolong
Bruising the freshly picked tea leaves starts an oxidation process and the edges of the leaves begin to brown. Depending of what style of oolong is being made, the leaves are oxidized to a certain point before being panned or baked. Oolongs range in color from light green with light and floral flavors to dark brown with roasty and chocolate overtones.
