Green
Next to white tea, green tea undergoes the least amount of processing after being picked. The leaves may be withered slightly and then steamed, pan-fried or fired to prevent oxidation. Following that, the leaves are rolled for shape and are then dried. Flavors can range from sweet and light all the way to astringent, nutty and strong, most often depending on how one chooses to brew it.
